    A Full Kitchen Night on the Kenai

    Some evenings in this kitchen, everything is firing at once. Last night was one of those nights.

    By the time I was done, there were banana muffins cooling on the rack, 18 hearty breakfast burritos wrapped and labeled in foil trays, lasagna fresh out of the oven, Shepherd’s Pie and Creamy Chicken Casserole ready to go, and Beef Stroganoff Casseroles lined up on the counter. Plus Day Tripper bag lunches packed and ready for the morning.

    It was a good night.

    Where it started

    The marinara came first. I make it from scratch — it’s not something I’d cut corners on for a lasagna, and it shows in the finished dish. There’s a particular point when a pot of marinara starts to smell exactly right, and you know it. Last night it got there.

    The lasagna itself — the one that came out of the oven — weighed 5.87 lbs when it was done. That’s the kind of detail I track, because I think it matters. One pan going to a lodge on the Kenai where a group of guests is about to have a real dinner instead of figuring it out themselves.

    The burritos came next. Hearty Breakfast Burrito is my name for it, and it means eggs, bacon, potatoes, cheese, all wrapped in a nice soft tortilla and ready to heat. They freeze clean and they reheat without any fuss. I had a full tray of them by the time the lasagna was cooling.

    The muffins were the steady hum underneath everything — banana muffins, clamshell packaged, labeled, stacked and ready.

    Why this matters

    I run this kitchen to feed people who are busy, who are adventuring, who are tired of their guests figuring out food on their own, or who just want something real.
